Cut from just under the rib section of a steer, or more specifically the diaphragm, the skirt steak is prized for its flavour.
COOKING TIP: One word. Chimichurri. Okay fine, a few more words. Ideally, you'll want to season both sides with some salt, pepper, and olive oil then cook your skirt steak on the BBQ for just a few minutes on each side. Let it rest and then make sure you cut it against the grain otherwise it'll be hard to chew. Serve with chimichurri!
